Chicken pot pie is a classic. You can easily find them at the grocery store BUT those are absolutely terrible for you! I would definitely stay far away from them. Full of processed ingredients and things just not good for your body. I absolutely love making my own food. I know whats going in it and I just love knowing my hard work is nourishing my body!

This vegan "chicken" pot pie is so amazing. So amazing in fact, we ate the whole pie pan.. No joke!
This crust is a MUST. I've never tasted a crust so delicious before. It's so flaky and crisp!



Ingredients

  • 1/2 Organic Yellow Onion Chopped
  • 3/4 Cup frozen organic peas
  • 3/4 Cup frozen organic carrots
  • 3/4 Cup frozen organic corn
  • Two 1/2 tsp minced organic garlic
  • 1 heaping spoon of organic vegan butter
  • 1 1/2 tsp chicken-free broth concentrate (I used Better than Bouillon No-Chicken base. Found at whole foods)
  • 3 TBS of organic flour
  • 1 1/4 cup or organic coconut milk (almond milk works too)
  • salt & pepper
  • 6 sheets of organic filo dough ( found mine at whole foods in the ice cream isle)
  • 8 inch round pan lightly oiled
Directions

Preheat the oven to 375F. In a medium sized skillet, sautee garlic, onion and carrots in a little spoon full of coconut oil. When the carrots are mostly done, add in peas & corn. Once everything is cooked, remove from heat and set aside.

In your lightly greased pie pan, lay 1 sheet of filo dough down vertically and lightly brush with melted vegan butter. Add another sheet of filo dough down horizontally and brush with butter again. (You want the dough to criss-cross) Continue to do so until all 6 pieces are layed out.

For the sauce, put your 1 heaping spoon full of butter into a pan over medium heat. Once that is melted add in your 3 TBS of flour. It will be thick. Contiune to whisk as you add in your 1 1/4 cups of coconut milk and chicken-free concentrate. Once everything is melted and the sauce has formed a thicker consistancy, turn off burner and set aside. 

Mix the veggies in with the sauce and then pour the mixture into the middle of your dough. Spread out your filling. Then carefully put the dough into the center of the pan. (The dough that is hanging off the edges) Doesn't have to be neat, that's the great thing about pot pies! Just make sure your filling is covered. Sprinkle salt and pepper on top of crust if desired!

Bake for 30-35 minutes. (Crust should be golden)
