Vegan Chocolate Chip Banana Bread

Growing up, bananas that were covered in brown spots were classified as the "banana bread banana". That's just how it went and that's still how it goes! In our house we get a little banana happy and end up buying way too many bananas. That was the case last week, so I had just the perfect amount for homemade banana bread!
This bread is so soft inside and the chocolate just melts in your mouth. I love the combination of bananas and chocolate. This recipe is perfect for anyone that wants to stay away from too much sugar or eggs!
Ingredients
- 2 1/2 cups of oats (Gluten free if you have a gluten intolerance)
- 1 1/2 cups mashed banana (make sure you mash the bananas, then fill the measuring cups)
- 1/2 cup of peanut butter (I used a peanut butter that had cinnamon in it!)
- 2 tsp baking powder
- non dairy milk*
- 2 small spoon fulls of coconut sugar (any sugar will work)
- 1/2 cup vegan chocolate chips (I used just under the 1/2 cup mark & I used Enjoy Life brand for chocolate chips)
- Banana slices on top if desired
* You may need to add a few tablespoons of milk to the mixture to thin it out a little
Directions
1. Preheat oven to 350. Lightly oil a loaf pan and set aside.
2. Put oats into a blender and blend until a flour consistency
3. Add all of the remaining ingredients and blend until completely blended together. You will have to stop a few times to scrap down the sides of the blender. The batter will be a lot thicker than normal banana bread. Add a few tablespoons of milk to thin it out, if it is too thick. I used maybe 2 or 3 tablespoons. My consistency was still a little thick but wasn't runny either. Just perfect. You may have to "eyeball" it.
4. Fold in your 1/2 cup of chocolate chips
5. Pour batter into loaf pan and add sliced bananas and a few sprinkles of chocolate chips if desired
6. Bake for 25-30 minutes (until toothpick comes out clean)
